"Vermicelli", so called in Switzerland in French as well as in German and Italian, is a dessert made from chestnuts,. The chestnut puree is pressed through a pierced surface; filaments are thus obtained which are erected in "nest". The whole is placed on a tart and a meringue, and embellished with whipped cream and fruits. OTAF is a private foundation subsidized by the Ticino canton.
